PatsyPie is the nickname of Pat Libling, a gifted cook and baker. In 1987 Pat was diagnosed with celiac disease, two of her three daughters were subsequently diagnosed with the troubling condition. Over the years Pat has put seemingly every gluten-free product to the test, but rarely did any measure up in taste, texture or quality to regular bakery or store-bought goods.
